Doubt if you will get what you are looking for witin 100 euros a night.
But check out The Certovka in Mala Strana right next to Charles Bridge.
Email them asking for best rate at www.certovka.cz
Absolutely wonderful location.
Please be warned many doubles in Prague are 2 single beds pushed together.
Many only have showers, not bath tubs.
Ask if you can have a room with views of either Castle or Bridge.
Breakfasts rather basic, but location, cleanliness ambience and intimacy perfect.
Ensure you go up to Petrin Hill using The Funicular Railway, The Castle area and explore Mala Strana.
Visit The Europa Hotel in Wenceslas Square to admire the wonderful chandelliers and have a drink.
Try the absinth if you dare!!!
Be warned, this is THE TOURIST AREA.
It attracts many pick-pockets and stag parties
Watch out for pick-pockets.
Wander around the back streets of Old Town and TheJewish Quarter to find the cheapest, quaintest little bars and cafes.
Be sure to take plenty of local currency (in small denominations), as many bars struggle with change.
Enjoy

Only one Metro stop away on Nam. Miru is Sahara Cafe, no tourists there, a fantastic place. Beautiful balanced asian decor, italian quisine, local clientel. Or one stop further and a few steps to walk is my favorite, Aromi. Fantastic service and food.
If you look for the real Czech experience I recommend V Tunich, which is 10 min walk from hotel Jalta, just walk up the street opposite the hotel. www.vtunich.cz, local food local people, very cheap.
